Coffee Bean Processing and Quality Maintenance Process


1. Harvesting

Selective Picking: Our beans are handpicked to ensure only the ripest cherries are harvested. This selective picking method allows us to maintain consistency in the flavor and quality of our coffee.

Timing: Harvesting is done at the peak of the coffee cherry’s maturity, ensuring that the beans inside have developed the optimal flavor profile.

2. Processing Methods
Washed Process (Wet Process)

Pulping: The freshly picked cherries are depulped using clean water. The outer skin and some of the pulp are removed.

Fermentation: Beans are fermented to break down the remaining mucilage. This process is closely monitored to ensure the beans do not over-ferment.

Washing: After fermentation, beans are thoroughly washed to remove any remaining mucilage.

Drying: The washed beans are sun-dried or machine-dried until they reach the desired moisture content.

Unwashed Process (Natural/Dry Process)

Drying: Whole cherries are laid out to dry under the sun. They are turned regularly to prevent fermentation and ensure even drying.

Hulling: Once dried, the outer layers of the cherry are removed, revealing the green coffee beans.

3. Sorting and Grading

Sorting: Beans are sorted by size, weight, and color to remove any defective beans that could affect the flavor.

Grading: Beans are graded based on their size, shape, and color. Only the highest grades of beans are selected for our premium coffee blends.

4. Quality Control

Cupping: Each batch of coffee is cupped by our experts to assess its aroma, flavor, body, and acidity. This step ensures consistency across all batches.

Moisture Content Monitoring: We regularly monitor the moisture content of the beans to prevent over-drying or under-drying, which can impact the flavor and shelf life.

5. Packaging

Once the beans have been roasted, they are immediately packed in airtight bags with one-way valves to preserve freshness and protect them from oxygen and moisture.

Sustainability: Our packaging is eco-friendly, reflecting our commitment to sustainability and environmental responsibility.

6. Sustainability Practices
